I used to have an iPhone 3G. I installed way too many apps on it, and I think performance suffered as a result. Then I lost my 3G.

As a result, I'm afraid to sync my new 3GS to iTunes because it will try to put all the "old" 3G iPhone crap on there. How can I sync all my content (music, photos, etc.) to my new iPhone without syncing all the old crap from my 3G?
